Awkward & Awesome Thursdays!

**Moving out of my duplex...it’s been my home for the last three years!
**My coworker coming to my desk, letting out little (but deadly) farts and then walking away as if nothing happened. Seriously?
**Forgetting to scramble up the magnetic poetry on our fridge when Brian’s Dad and stepmom stayed with us. Our poems were not family friendly! :x
**The amount of STUFF I have accumulated over the last few years. It’s insane.
**You know what else is insane? The number of bug bites on my feet and legs. Anybody have any little tricks to keep the mosquitoes away??

**Moving in with my boyfriend! It’s funny, I thought it would *feel* different...like maybe I would notice a shift in our immediate universe. But it doesn’t at all, feels totally normal. :) Plus it’s super great seeing him everyday.
**Brian’s Dad and step mom coming down to help us move!
**Our friends coming to help me move AND bringing a horse trailer for all my shit!
**Memorial Day grillin’ (and bags) with all our happy helpers!
**Audio books! I have Spanish for Dummies & The Paris Wife. :)
**Brian getting up early and making me breakfast yesterday. So sweet!

Fallen Off

I fee like I sort of fell off the planet...the internet planet that is. I haven’t read anyone’s blogs since early last week, it feels so strange! In any case, the moving part is over, but now we just have to get me unpacked. I’ve made quite a bit of progress...the bedroom is pretty much done, the kitchen is totally done and Brian set up my computer while I was at work today. :) So, I will just keep going from room to room until it’s all unpacked! I have a few older a couple weeks ago older) outfits I can post this week, then hopefully my life will get unhectic and I can get some new shots. Until then, here’s what I’ve been up to the past couple weeks.

Recipe: Eggs 'n Stuff

Kassie’s Egg’s & Stuff

So, this is a total cop-out for a real recipe...because obviously you just make eggs and add stuff. However, this is a staple on weekend mornings, so I thought I’d just share what I generally “add”. :)


You Need:
Eggs or egg beaters
Almond milk
Veggies, chopped
Meat of sorts (optional)
shredded cheese
Oil
Pepper
Salt
Other Seasonings you like - I like using minced garlic or garlic powder. :)

You Do:

1. First, heat up some oil in a pan. If you are going to add meat, cook it first. Then add your veggies. I generally just use whatever is left in the fridge from the previous week. This day I used green peppers (yum!) and carrots! If you are using meat that’s already cooked (I used a leftover ranch burger from the night before, ha), then wait till your veggies have cooked for a few minutes, then add it.

2. While the veggies are doing their thing, prep your eggs. I generally make 1.5-2 eggs per person. So crack and whisk your eggs in a separate dish. If you want the eggs to be a bit fluffier add a some milk, I use almond milk. Just eyeball it! I also usually add some spices here, like the garlic powder and a bit of pepper.

3. Next pour the eggs into the pan with your veggies. I let it sit and firm up for a minute or two before I start “scramblin”. If you want add some more pepper and a smidge of salt now. I also added a bit of cheese at this point.

4. Lastly, start scramblin’ your eggs! You’ll want to do this over low/med heat so they don’t burn. Add more cheese and seasonings if you want and just cook your eggs to your liking. I don’t like mine runny, so I cook them all the way.


There ya go! Super easy and yummy!

Recipe: Fruit Salad

This is so ridiculously easy that you really don’t need a recipe. However, since there are so many ways to make a fruit salad I thought I’d share one of my favorites with you [plus the pictures just look so delish!]. Obviously, you can substitute with different fruit and with different flavored yogurt or juice.

FRUIT SALAD


What you need:

2 small bananas
2 kiwi
Strawberries (probably about 1-2 cups, I just added until I was happy with it)
1 single serving of yogurt (I used light raspberry)
Orange Juice




What you do:

1. Slice up all your fruit.
2. Toss fruit and yogurt together in a bowl.
3. Add a tablespoon or two of OJ - just eyeball it to the consistency you want!



That’s it! A quick and simple dish that you can make at your next brunch! Enjoy!
